Rose And Strawberry Ice Cream

Got rose petals? If you do you can make a delicious syrup with just sugar, water, and rose petals that you can add to cocktails, ice cream, and cook with. To get that pretty pink hue you will need to use darker roses. Here is the recipe to make rose petal syrup along with an ice cream recipe that is truly divine, using rose syrup and strawberries that will have you begging your garden for more roses.

Rose And Strawberry Ice Cream

1 cup fresh strawberries, diced and macerated with 1 Tbsp sugar

1 14 oz can sweetened condensed milk

1 1/4 cup milk

1 cup heavy cream

1 tsp vanilla

1 cup rose petal syrup (pre-make, recipe below)


Macerate strawberries and set aside. You can also do this the night before and let set in refrigerator.

Combine in a large bowl remaining ingredients and mix together. Pour into Breville Smart Scoop Ice Cream Maker or other ice cream maker (you can also pre-cool the Breville). Set your ice cream maker to ICE CREAM. Once it is time to ‘ADD INS’, pause machine and pour in strawberries. Re-start and finish the ice cream cycle and serve immediately.

Rose Petal Syrup

1 cup rose petal

1 cup sugar

2 cups water

1/2 lemon squeezed


Bring sugar and water to a boil. Put in rose petals, reduce heat. Add lemon juice. Simmer on low for 30 minutes, stirring occasionally. Strain through a sieve or cheesecloth, then bottle.
