Southwestern Rice and Lentil Bowl

A big bowl of Southwestern style goodness, this dish is sure to please your tastebuds, your tummy, and your family.

Southwestern Rice and Lentil Bowl

1 1/2 cups Beluga lentils, cooked and seasoned with cayenne powder

1/2 cups Basmati rice, cooked and seasoned with olive oil and salt

2 medium tomatoes, diced

2 avocados, sliced

1 ear of corn, cooked and cut from cob

1/4 cup diced onion

7 sprigs of cilantro, chopped

Jalapeno, optional

Hatch chile dressing, optional (recipe here)

Directions:

Assemble rice, lentils, tomatoes, avocado, corn, and corn evenly distributed in bowls. Top with cilantro, jalapeƱo, and Hatch chile dressing if desired.
