Southwestern Rice and Lentil Bowl
1 1/2 cups Beluga lentils, cooked and seasoned with cayenne powder
1/2 cups Basmati rice, cooked and seasoned with olive oil and salt
2 medium tomatoes, diced
2 avocados, sliced
1 ear of corn, cooked and cut from cob
1/4 cup diced onion
7 sprigs of cilantro, chopped
Hatch chile dressing, optional (recipe here)
Assemble rice, lentils, tomatoes, avocado, corn, and corn evenly distributed in bowls. Top with cilantro, jalapeño, and Hatch chile dressing if desired.
