Meatless Tortilla Soup Recipe

Soup’s on in our household lately – this meatless tortilla soup hits the spot on chilly days and is too mouthwatering not to share.

Meatless Tortilla Soup

3 Tbsp extra virgin olive oil

1/2 large sweet onion, diced

2 cloves garlic, finely chopped

1 tsp salt

4 cups chicken broth

1 Tbsp chili powder

1 Tbsp paprika

1/2 tsp freshly ground black pepper

1/4 tsp cayenne pepper

1 cup pintos, cooked

1 cup black beans, cooked

2 ears of corn, kernels cut from cob

2 large tomatoes, diced

1 red bell pepper, diced

2 carrots, diced very small

1/2 bunch cilantro, chopped

Avocado, sliced

1/2 jalapeno, sliced

Sour cream

Directions:

Saute onion and garlic in olive oil over medium heat in large heavy bottom pot. Add salt then chicken broth bring to a boil. Reduce heat to medium and add remaining seasonings along with beans, corn, tomatoes, bell pepper, and carrots. Reduce heat to simmer for 30 or more minutes. Garnish with cilantro, avocado, jalapeño, and sour cream. Serve hot, store remaining soup in refrigerator.
